Honey Muffins

Makes 12 muffins

  • 1/2 cup honey
  • 1/2 cup orange juice
  • 1/3 cup butter or margarine, melted
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Combine honey, orange juice, butter, eggs and vanilla; mix well. Combine flour, sugar, baking powder, baking soda and salt in mixing bowl. Stir liquid mixture into dry ingredients until well blended. Pour into greased and floured muffin cups and fill 2/3 full. Bake at 375°F 15 to 20 minutes or until golden.


Tip: Variations: Fold any of the following into the basic muffin recipe: 1 cup blueberries, fresh or frozen 1/2 cup each flaked coconut and well-drained crushed pineapple 1/2 cup each chopped dates and pecans
