  • 1/2 cup Hawaiian Rainbow Bees Rainbow Blossom Honey
  • 1/3 cup margarine (or butter)
  • 1 teaspoon vanilla
  • 2 eggs
  • 3/4 cups whole wheat flour
  • 1/2 cup unbleached flour
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup ripe banana, mashed
  • 1/2 cup walnuts, chopped

Preheat oven to 325°F.

Cream the honey with margarine in a large mixing bowl. Continue mixing until it is fluffy.

Beat in vanilla. Add eggs one at a time. Beat well after each added egg.

Combine the dry ingredients. Add some of bananas to egg mixture, alternating with dry mix, blending well.

Stir in the walnuts.

Spoon into a greased 9x5x3 inch loaf pan.

Bake at 325°F 50 to 55 minutes or until a wooden pick inserted near the center of the loaf is pulled out clean. Cool completely before slicing.
