- 1/3 cup margarine
- 1 teaspoon vanilla
- 2 eggs
- 3/4 cups whole wheat flour
- 1/2 cup unbleached flour
- 1 teaspoon baking powder
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup ripe banana, mashed
- 1/2 cup walnuts, chopped

Preheat oven to 325°F.
Cream honey and margarine in a large mixing bowl. Continue mixing until fluffy.
Beat in vanilla. Add eggs one at a time. Beat well after each addition.
Combine dry ingredients. Add alternately with bananas, blending well.
Stir in walnuts.
Spoon into a greased 9x5x3-inch loaf pan.
Bake at 325°F 50 to 55 minutes or until a wooden pick inserted near the center of the loaf comes out clean. Cool completely before slicing.
